THIS WAS THE CHOICE THAT CHARACTERIZED THE COMPANY’S ACTIVITIES, THUS COMBINING INTELLIGENCE, PASSION AND PROFESSION, MANAGING TO BE KNOWN AND APPRECIATED BY THE MOST DEMANDING CUSTOMERS.

In 1965, driven by a real passion for their work, the Conti brothers opened their own butcher’s shop, an activity that has developed through a growth process that has been able to safeguard important values ​​such as the careful choice of meats coming only from selected farms, processing procedures carried out with the utmost care, and perfect seasoning carried out in special controlled rooms.

In fact, in the beginning it was the pressing and continuous requests of their customers that convinced the two brothers to increase their business with their own cured meat factory that could fully satisfy the requests for quantity and, above all, for the quality of the products.

With the opening of the new factory designed and built according to EU regulations and recognized by the EEC as a laboratory for processing meat products with the number 1458 / L, the sausage factory guarantees the production of typical Tuscan sausages obtained with meat from pigs born and reared in Italy, and produced in a hygienically controlled environment equipped with the most technologically advanced systems and machinery. The constant technological updating together with the adaptation of the structures and the constant search for quality, condensed in the company’s motto “Towards quality”, have thus allowed the achievement of increasingly important results both in terms of production and quality which finally materialize in the satisfaction of its customers.

Orlando, the elder brother, represents the art of the master butcher in the company. Expert hands in the selection of spices, in the choice of aromas and raw materials. He supervises and guides all the manufacturing processes from cutting the meat to maturing.

Carlo began working with his brother in the butcher’s shop, and since then he continues to be the reference for anyone who crosses the front door, be they customers, collaborators or suppliers. He always satisfies every need and everyone remains happy and satisfied, so much so that, for over 50 years, they keep coming back and new ones are constantly arriving.

THE TEAM WORKING IN THE SAUSAGE FACTORY

From the entry of raw materials to the production of the finished product, our sausage factory encompasses all the production phases, conducted with many years of experience that has responded to the ever increasing demands both in quantitative and qualitative terms.
Needless to mention the Mortadella di Prato I.G.P., our flagship, but in addition to it we also produce (and not only):

  • Hams aged over 17 months.
  • The award-winning and highly appreciated in many parts of Italy, Polpa di Spalla.
  • Denervated sausages, appreciated and in great demand.
  • The “Soppressata” also the subject of prizes and awards.
  • Porchetta Trunk

Every day our cells house each of these products, which are daily checked in the delicate balance between humidity and temperatures. The pork meat used in our products comes from pigs strictly of national origin. The innovation and automation that we have necessarily brought over the years have never affected the tradition and craftsmanship of our products.

THE TEAM WORKING IN THE BUTCHER’S SHOP

The retail store is the direct channel for the marketing of all the production of the cured meat factory. In addition to its products, the butcher’s shop also processes fine and high quality beef breeds’ meat. It proceeds in the very important stages of cutting and aging, fundamental stages for obtaining tender and tasty meats.

The shop offers a wide selection not only of beef, but also of local poultry and national pork.

Over the years the competence of the store has grown and distinguished itself also in the production of highly appreciated ready-to-cook dishes with always new ideas in line with the tastes and needs of consumers.
